We are so excited to welcome back Caitlion O\'Neill for another Cheezmaking class!\

Caitlion’s journey into the art of vegan cheesemaking began in 2015 when they developed a dairy allergy and sought to not just replicate, but outdo, the artisan cheeses they loved. Today, Caitlion is the chef-owner of VIRIDIA, Louisiana\'s first vegan cheese company, and loves to share the recipes and techniques of this exciting new culinary world. They brought local favorite, small-batch vegan cheeses nationwide with their Cuterie Box project (@cuteriebox). Caitlion will bring a vegan perspective to the regulatory and policy-based world of food law when they graduate law school this May. Caitlion hopes to be producing vegan cheese professionally again...but first, to pass the bar exam!\
